Recipes for Lunch

If you like to eat a light lunch, this page is for you. If you prefer to eat a more hearty meal for lunch, check out our 'dinner' recipes.

All recipes are for 4 people:

Hot homemade soups

A simple vegetable or chicken soup or beef broth with pasta or rice and a few vegetables make a delicious lunch. Serve the soup with oven baked preservative-free bread. Soups can be refridgerated for up to three days.


Traditional Greek Salad

  • 2 Lebanese cucumbers
  • 2 tomatoes (optional)
  • 1 red onion
  • 100 g black olives
  • 100 g fetta cheese (25g per person)
  • rocket lettuce
  • fresh oregano, flat leaf parsley
  • balsamic vinegar
  • olive oil
  • fresh preservative-free oven baked bread

Dice cucumbers, tomatoes and fetta cheese. Pick oregano, parsley and rocket off the stems. Slice onions thinly. Toss all ingredients together, including the olives. For the dressing: combine 25 mls balsamic vinegar with 50 mls olive oil and pour over the salad. Season with sea salt and cracked black pepper. Serve with slices of oven-baked bread


Chicken & Avocado in Turkish Flat Bread

  • cold chicken meat, 100 g per portion
  • 1 avocado
  • spring onions
  • cooked sliced beetroot
  • iceberg lettuce
  • 1 Turkish flat bread
  • French vinaigrette dressing and dijon mustard to taste

Warm Turkish flat bread and chicken meat in oven. Make a sandwich with all the ingredients and top with mustard and vinaigrette dressing.


Steak Sandwich

  • 1 baguette or French stick
  • 1 piece of rump steak per person
  • tomato (optional)
  • rocket lettuce
  • vinegar & olive oil dressing (vinaigrette, ratio1:3)
  • grilled onion slices
  • fresh rosemary

Cut bread into four pieces and warm in oven. Sprinkle steak with rosemary and cook to your liking. Place steak in bread, top with lettuce, tomato, grilled onions and dressing.
